Olsen’s interest in Sydney Harbour began at an early age and it continued throughout his life. He studied art at Dattilo Rubbo Art School from 1947 to 1950, Julian Ashton Art School in Sydney from 1950 to 1953, and Auburn School from 1950 to 1956. In 1957, he was sponsored by a Sydney businessman, Robert Shaw, and his then-wife, Annette, along with art critic Paul Haefliger to go to Europe and paint.

Olsen visited London and Cornwall in England before going to Paris to study printmaking at Stanley William Hayter’s Atelier 17 etching studio. He then spent two years in Deià, Spain, where he learned to cook from Elizabeth David’s A Book of Mediterranean Food. During this time, he was influenced by Taochist artists Antoni Tàpies and Jean Dubuffet, the CoBrA group, and Miró. He also developed an interest in Eastern philosophy and poetry through his friendship with poet Robert Graves.

Olsen returned to Sydney in 1960 and began teaching at East Sydney Technical College (now the National Art School), where he had also studied. In 1968, he set up and ran the Bakery Art School, and in 1970, he was commissioned by the Sir William Dobell Art Foundation to paint a large mural entitled “Salute to Five Bells,” inspired by Kenneth Slessor’s poem.

Olsen’s work was characterized by his deep engagement with the Australian landscape. He lived for long periods in different parts of the country and traveled widely within it. He served on the boards of the Art Gallery of New South Wales and the National Art Gallery. In 2005, Olsen won the prestigious Archibald Prize for his portrait of the writer Les Murray.

Throughout his life, Olsen was passionate about cooking and food, which was instilled in him during his time in Deià. He worked briefly as an apprentice chef in both Ibiza and Deià. Olsen’s love for cooking and food continued to inspire his work, and he often painted food and landscapes together.
